A little cheat

My husband and I made this Paleo-esque lasagna thing tonight and I have to share.  I say Paleo- esque because we added Ricotta cheese, so it's not purebred Paleo.  Warning: we are not even remotely expert chefs, so the measurements are, um, free form, kind of. The sauce: One white onion, diced and sauteed in a large saucepan with a splash of olive oil, until the onions are clear. Add 4 pounds of medium tomatoes, cut into small, thin slices, so they cook down easily. Add 3 small-medium bunches of broccoli, diced into tiny pieces. Add one handful of fresh oregano, diced. Add 6 cloves of garlic, diced. Add 3, 28-ounce cans of whole peeled tomatoes. Use a hand mixer to gently blend these ingredients in the saucepan. Add one pound of coo

Tis the season for giving, so I spent my crappling session today giving up my back, arms, and neck to everyone .  I also got a knee into my right side so now I have a torqued rib that hurts every time I move my torso.  Lovely.  That's all for now, I am going to fish my sucker out of the dirt, I threw it so hard it's now buried. Week One of Paleo

I went to Friday night no-gi tonight and had a pretty decent class.  I rolled with Mark, who is the usual combo of bigger, stronger, blah blah blah.   I passed his guard twice, got the mount once and went for a triangle a couple of times, but unfortunately did not execute my technique correctly and wound up in a position of DISadvantage.  Then he tapped me out.  Coupla times.   grrrrr I'm mad about getting tapped out, but the silver lining was that I got tapped whilst seeking out my own submission, and I was working on a new submission; going from turtle to a triangle.  I just re-read this last statement and I realize I sound like Pollyanna or Mary Poppins, all tweeky optimistic.  But for heavens sakes, I don't want to be sucked into a din of misery every time I lose a fight.   I am embracing the process, letting go, taking risks, taking risks, taking risks.   I'm finally starting to get submissions, just,   not,  tonight. Challenges and Vegetables

Day two of Paleo. Breakfast- Smoothie made with two bananas, almond milk, and a small scoop of sunflower seeds. Lunch- Bell pepper, bamboo shoots, carrots, peas (not allowed, I know, but they are nutritious),  beef, with red curry mixed in coconut milk. Snack- Almond, cashew, raisin mix. Dinner- Sort of a vegetable hodge podge.  We had a container full of cut vegetables from my husband's concoction the other night, so here is my master recipe: Pre-heat oven to 400 degrees. Line one large pan with tin foil. Place zucchini, tomato, portablello mushroom in the pan. Spread minced garlic all over the vegetables. Sprinkle thyme, Chinese 5 spice, and basil. Drizzle just a little bit of olive oil. Use a wooden spoon to move and mix everything. Bake for 20-25 minutes, or until all the vegetables look soft and cooked. Class was hmmm, there. Good will to everyone...

Many of you have written about turmoils and tribulations in your lives and I want to send out good thoughts on the internet lines to my readers, and to the authors of the blogs I follow. Day One of Paleo went well. Late Breakfast (I slept in today)- Black coffee.  One bowl of pineapple, and one bowl (about a fist size) of lean pork. Lunch- Mixed cashews, raisins, and pepitas, with a glass of Emergen-C. Dinner- Two bowls (small fist sized portions) of my husband's latest creation, which was a layered-vegetable-crock pot thing consisting of eggplant, tomato, zucchini, red onion, basil, garlic, and the same lean roasted pork. I feel good.  A couple of times I wanted to sprint to a bowl of cereal, but I drank water instead.  Ready for day 2. Train well, Dag

Countdown to Paleo....

Okay, I scarfed a patty melt and a wonderful IPA at lunch today, and I am seriously considering a plate of pasta right now. Because tomorrow, PALEO. I don't have the book yet,  but I am going to start by following some of the recipes on "The Clothes Make The Girl,"  which is a wonderful blog by a gal who does Roller Derby and by all accounts she is rippingly cool.  Her link is on my Reading List. The two things I am going to be strictest on are wheat and sugar.  I can practically feel the sensation of my metabolism and energy dropping off when I indulge too much of these little bastions of evil.  So, I'll just pull out a Jedi Mind Trick on myself after tonight; "This is not the ice cream you want...(hand waves across the offending ice cream, erasing all cookie dough from sight). I will be using a lot of broccoli, which I find revolting, but it's loaded with vitamins; and based on prior food regimens I have followed, I know my body loves broccoli.  S
